For Coating

Button Mushroom- 200 gm
Corn Flour- 3 tbsp
Refined Flour- 3 tbsp

Oil- 3 tbsp
Garlic- 2 tbsp (chopped)
Ginger- 1 tbsp(chopped)
Spring onion- A handful
Green chilli- 2 nos.
Dark soy sauce- 2 tbsp
Sugar- 1 tbsp
Water- 1cup
Vinegar- 1/2 tbsp
Pepper powder- 1/2 tbsp
Salt- a pinch of
Corn flour- 2 tbsp

Fresh coriander- a small handful(roughly chopped)

Mushroom Cutting

You can cut mushrooms in 3 ways for the chilli mushroom recipe.

First Process:

     Trim the stem from the bottom of mushrooms. Then separate the stem from upper portions of mushrooms. Peel the skin from upper portion and divide it into 4 pieces. Then peel the skin from bottom portion and divide it into 2 pieces.

Second Process:

Trim the stem and divide the whole mushroom into two halves or four pieces.

Third Process:

Peel the skin from upper portion of mushrooms and then divide the whole mushroom into two pieces.

Bell Peppers Cutting

Cut the bellpeppers into square shapes and then wash in water and set them aside into bowl.

Spring Onion Cutting

Take 3-4 stems of spring onion. First you remove the roots of spring onion and then divide into two portions. First you chop the root portions into small pieces and keep in one bowl. Then finely chop the other portions and keep in another bowl and then wash in water.

At first you peel the skin of onion and wash it. Then divide the whole onion into 4 pieces. Separate the layers of the onion and cut each layer into two halves. It will looks like almost square shapes.

First you peel the skin from ginger and garlic and wash with water. Then chop ginger and garlic into small small pieces and keep in different bowl.

Cooking Process of chilli mushroom recipe:

1. Heat oil in a pan. Turn the gas flame on medium.

2. Meanwhile wash the mushrooms with water and strain the excess water with a stariner. Then transfer all the mushrooms in a plate.

3. To coat the mushrooms, add 2 tbsp corn flour and 2 tbsp refine flour or maida. Then mix them with spoon.

4. Again add 1 tbsp corn flour and 1 tbsp maida to the mushrooms and mix with hands well.

5. Now strain excess flour with the help of strainer.

6. See if the oil is heated enough, add the mushrooms into the hot oil and fry them for 1-2 mins.

7. After frying, place them on a tissue paper to remove excess oil.

8. Take a wok and heat on a high flame and add 2-3 tbsp refine oil, let the oil get hot.

9. Then add 2 tbsp chopped garlic, 1 tbsp chopped ginger and onions. Add one handful of chopped spring onion bottom portions.

10. Next add two sliced spicy green chillies. Lightly roast them for 1 min.

11. Now add 2 tbsp dark soy sauce, one cup water approximately 200ml. Then add 1 tbsp vinegar, a pinch of salt, 1 tbsp sugar, 1/2 tbsp pepper powder.

12. In a bowl take 2 tbsp corn flour and add half cup water with it. Then mix well.

13. Now add slurry slowly to the sauce and stir well. After sometime you can see sauce become thickened.

14. After that lower the flame and add all the cutting bell peppers, onions, handful of chopped spring onions upper portions, add fried mushrooms. Then mix everything very nicely. Then cover it for 1 min.
