- Basmati rice-250gm for 4 servings
- Peas-50gm
- Green capsicum-50gm
- Beans-50gm
- Carrot-50gm
- Kaju-25gm
- Kismis-25gm
- Whole garam masala mix( cinnamon,cardamom,cloves,javitri,bay leaves)
- Garam masala powder
- Ghee-1 spoon
- Refine oil-2 to 3 spoon
- Sugar
- Salt

Selecting the Perfect Rice
When making veg fried rice, it’s best to use long-grain rice such as jasmine or basmati rice for a light and fluffy texture. Make sure to rinse the rice before cooking to remove excess starch.
Choosing Fresh Vegetables
Fresh vegetables are essential for a flavorful veg fried rice. You can use a mix of colorful vegetables like bell peppers, carrots, beans and green peas to add both flavor and nutrition to your dish.

Step by Step Guide:
- Take one cup rice. If you have large family then you increase the amount. Here I have taken 250 gm aged basmati rice for 4 servings. You can also use long grain or medium grain jasmine rice or sona masoori rice.
2. Rinse the rice 3 to 4 times to remove starch. Starch is going to make the rice sticky. So need to wash rice properly till the water runs clear.
3. Soak rice for 20 to 30 mins.
4. Meanwhile pour 2 litre water in a kadai if you take 250 gm rice. Add in water, 2 bay leaves, 2 to 3 stick cinnamon, 2 to 3 cardamom, little javitri and little salt. Put the gas flame medium to high.
5. Bring it to boil on a high flame. When the water begins to boil, drain the rice . Add it to the boiling water. Continue to cook on a medium high flame.
6. Keep checking so you don’t overcook the rice. It will take only few minutes. When rice is about 80% cooked then stop cooking and then quickly drain the rice in a strainer and cool it until all the steam vanishes.
If you feel rice is on the softer side and over cooked then sprinkle one tablespoon oil on the rice and spread it. Cool it without covering.
7. Meanwhile during rice preparation, chopped all the vegetables. Chopped carrot, capsicum, beans into small pieces. Open the pods and take out green peas from there. Keep aside all the garam masala spices.
8. Now heat the same kadai on medium flame. Take one spoon ghee in it and add 2 to 3 spoon refined oil. You can skip ghee if you don’t want. In this case you have to add more amount of refined oil. Here I have added ghee for good aroma and taste.
9. Then add 3 to 4 cardamom or elaichi. Followed by 5 to 6 cloves, 3 to 4 stick cinnamon, little javitri on oil.
Then add cashews. Saute for sometimes till it turned little brown.
10. After that add green peas, chopped capsicum, carrot, beans and kismis or raisins together on kadai. Mix the vegetables and then cover with lid for sometimes.
11. Cover the lid for 3 to 4 mins. Then open the lid and stir the vegetables. Do not over cook the vegetables as we want them little crunchy.
12. Now add half amount of boiled rice with vegetables. Then mix rice and vegetables. Add two table spoon sugar if you want. Otherwise you can skip this option. Sugar keeps the colour of the vegetables intact and also helps the balance of the flavor.
Then add salt according to the taste. Add half spoon garam masala powder. Then add rest half amount of boiled rice and mix all things properly. Cover the lid for 2 to 3 mins.
At last mix well and the delicious yummy fried rice is ready to serve.
